Absolut Favorite Recipe

Each month, we will post our residents favorite recipe. These recipes are served in all of our facilities and have become huge hits with our residents and their families.

Bacon Wrapped Pork Roulade


Ingredients:

4 6 oz pork loins

1 cup chopped walnuts

1 avocado (peeled, pitted and sliced

Salt & Pepper

12 slices of bacon

1/2 cup Spanish onions

2 Tbls minced garlic

1/2 cup White Wine

1 cup chopped spinach

1/2 tsp granulated sugar

3 Tbls room temp butter


Directions:

1) Preheat oven ro 375.

2) Sautee onions, garlic and walnuts in butter and deglaze with white wine. Reduce until au sec, then add sugar and spinach and cook until spinach is wilted.  Cool until need to fill.

3) Slice open each pork loin, place between 2 piece plastic wrap and lightly pound with mallet until 1/8 inch thick.  Season both sides with salt and pepper.

4) Place pounded pork on top, spread walnut mixture over pork and roll.

5) Shingle bacon over each other length way.  Place pork roll on top of bacon and roll again.

6) Roast on a sheet pan with parchment paper until bacon is golden brown.
